Ingredients
For the Salad:
- 2 cups Romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- 1/2 cup red bell pepper, diced
- 1/2 cup yellow bell pepper, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/2 cup sweet corn
- 1 avocado, sliced
- 1/4 cup shredded carrots
- 1/4 cup chopped fresh parsley
For the Cajun Chicken:
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
For the Dressing:
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 garlic clove, minced
- 1 teaspoon Cajun seasoning
- Salt and pepper to taste
Instructions
Prepare the Chicken:
- Rub the chicken breasts with olive oil, Cajun seasoning, salt, and pepper.
- Heat a skillet over medium-high heat and cook the chicken for about 6-7 minutes on each side, or until fully cooked.
- Let the chicken rest for a few minutes before slicing it into thin strips.
Prepare the Salad:
- In a large salad bowl, combine the Romaine lettuce, cherry tomatoes, cucumber, red and yellow bell peppers, red onion, black olives, sweet corn, avocado, shredded carrots, and fresh parsley.
Make the Dressing:
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, minced garlic, Cajun seasoning, salt, and pepper until well combined.
Assemble the Salad:
- Add the sliced chicken to the salad bowl.
- Drizzle the dressing over the salad and toss gently to combine.
