Authentic Cajun Salad Recipe

Ingredients

For the Salad:

  • 2 cups Romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup yellow bell pepper, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1/2 cup sweet corn
  • 1 avocado, sliced
  • 1/4 cup shredded carrots

For the Cajun Chicken:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste

For the Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 garlic clove, minced
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken:

    • Rub the chicken breasts with olive oil, Cajun seasoning, salt, and pepper.
    • Heat a skillet over medium-high heat and cook the chicken for about 6-7 minutes on each side, or until fully cooked.
    • Let the chicken rest for a few minutes before slicing it into thin strips.
  2. Prepare the Salad:

    • In a large salad bowl, combine the Romaine lettuce, cherry tomatoes, cucumber, red and yellow bell peppers, red onion, black olives, sweet corn, avocado, shredded carrots, and fresh parsley.
  3. Make the Dressing:

    • In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, minced garlic, Cajun seasoning, salt, and pepper until well combined.
  4. Assemble the Salad:

    • Add the sliced chicken to the salad bowl.
    • Drizzle the dressing over the salad and toss gently to combine.
  5. Serve:
