Ingredients
For the Dressing:
- 2 cloves garlic, minced
- 1 teaspoon anchovy paste (or 2-3 anchovy fillets, minced)
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1 cup mayonnaise
- 1/2 cup freshly grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
For the Salad:
- 1 large head of Romaine lettuce, chopped or torn into bite-sized pieces
- 1/2 cup freshly grated Parmesan cheese
- 1 cup croutons (store-bought or homemade)
Instructions
Prepare the Dressing:
- In a medium bowl, whisk together the garlic, anchovy paste, lemon juice, Dijon mustard, and Worcestershire sauce.
- Add the mayonnaise and Parmesan cheese, and whisk until well combined.
- Season with salt and pepper to taste. Cover and refrigerate until ready to use.
Prepare the Lettuce:
- Wash and dry the Romaine lettuce. Tear or chop it into bite-sized pieces and place it in a large salad bowl.
Assemble the Salad:
- Drizzle the dressing over the lettuce. Toss gently to coat the leaves evenly.
- Sprinkle with freshly grated Parmesan cheese and croutons.
Serve:
- Serve immediately and enjoy!
